Moderator/Presenter: Dr. Jeff Gwirtz, President of JAG Service Inc., Manhattan, Kansas, specializes in food production. Dr. Gwirtz is a leading global expert on milling science and technology and flour making. Dr. Gwirtz is also an Associate Professor, Grain Science and Industry, Kansas State University, recognized worldwide for his expertise in processing, product development and commercialization.

Simon Mix, farmer, breadfruit drying and milling entrepreneur and local foods advocate from the Federated States of Micronesia. Simon operates and manages a local foods market in Phonpei for local farmers and the surrounding community.
